A Summer blend that tastes heavenly, with tangy and refreshing notes and has a deep ruby colour. I love making a big jug and keeping it in the fridge then serving it as is or with a squeeze of orange juice.

Ingredients: hibiscus flowers and mulberry leaves grown by my son’s grand-father in Hong Kong, wild gathered hawthorn blooms and leaves and foraged wild rose petals.

Hibiscus, hawthorn and rose have all an association with the heart, emotional and physical. In Traditional Chinese Medicine (TCM), the organ of the Summer is the heart and we are taught to connect to the fire element. Fire is the most yang, outwards, masculine and productive energy. To avoid an excess of fire in the Summer months, we use water and cooling energy. A cold infusion of this blend is great at calming the fire, staying refreshed and hydrated and enjoying the summer without feeling burnt out. Mulberry leaves have cooling properties and give this herbal blend a beautiful sweet taste.

Hibiscus flowers ~ rich in antioxidants, often used to support cooling and hydration

Mulberry leaf ~ cooling properties, supports blood sugar regulation, rich in flavonoid antioxidants and polyphenols that fight free radicals, reduce oxidative stress, and protect cells from damage
